Within rural tourism we can include many aspects that help us to know and understand the territory we visit. One of them is food, and there are few things better than arriving at a new place and discovering its flavors and smells. Meat: star product of our gastronomy
Meat can be considered the star product of the gastronomy of our region. Especially lamb. You can enjoy it grilled, for example. It’s a marvel!

The chiretas
One of the most typical dishes of the region are the chiretas. It is lamb tripe stuffed with rice and meat that is traditionally made in many houses in the area but you can also buy it in stores or eat it in restaurants.
Slaughter products
The pig slaughter is the most popular gastronomic festival in our region. This is the time to prepare sausage, chorizo or pâté, and also what is known as “mondongo”, that is, torteta and blood sausage.
Sobrarbe confectionery
If you are more of a sweet tooth, you will fall in love with our region’s pastries. You cannot leave without trying the nut pastillos ( and their versions with almonds or pumpkin), the crespillos (made with borage or spinach leaves coated in sweet dough), the walnut empanada with honey and sugar, the guirlache or the peach with wine. The best dessert to end a great meal in excellent company.
Salmorrejo
Salomorrejo is a typical Aragonese dish from this area of Huesca. It is quite potent, since in the past it was what shepherds and people who worked in the fields ate. It served to give them energy, and no wonder…. It is made with meat (loin, sausage, ham, torteta…), eggs and bread.
